Need of ADC's for biomedical Signal processing

For the best fidelity in measurement, I would recommend a precision ADC, and these are available in speeds of greater than 1Msps, which is certainly fast enough for most biometric signals. For Analog Devices, High Speed ADC's are for much higher bandwidth signals than these.

The AD7768-1 ADC recommended in this linked article, will provide a very high level of accuracy in this type of system. It has internal filter options to allow easy tradeoff between signal bandwidth and noise - get a lower noise answer for lower bandwidth signals. This would be the best in class converter for the highest accuracy measurement of the PPG signal.

Other ADC's which would be suitable are the ADAQ7988, or one of the AD4000 series, such as AD4010 or AD4011. I'd suggest you use the selection table here as a starting point.

For a more complete solution, there is an evaluation kit available here for the ADPD1081, which is a single-chip solution specific to PPG.
