With a 50Mhz ADC Clock (50MSPS ADC sampling), each ADC has a nyquist bandwidth of 25Mhz. If you have a direct conversion receiver a quadrature demodulator will take in a single RF signal with a 25Mhz bandwidth. The demoulator will downconvert the signal to a DC to 25Mhz baseband and split it into an I channel and a Q channel each with 25Mhz bandwidth. The two ADCs then convert the I and W channels to digital.

What samplerate do I have after the digital data of the two ADCs is multiplexed?

Table 10 in the AD9863 data sheet describes 4 data interface modes. Two fo the modes will output two seperate 12 bit ADC output busses at the ADC sampling rate. The other two modes will output samples from the two ADCs interleaved on to one 12 bit bus at 2x the ADC sampling rate.
