Can you tell me, please, why didn't you cover microstrip lines in the EVAL-CN0369-SDPZ with mask?

Masking is recommended if the RF traces are above 10Ghz to avoid insertion loss on soldermask , that's why on this CN0369 board masking was not applied.
Did you mean "masking is NOT recommended"?
You can still use soldermask it has very minimal effect on the RF trace, but always keep in mind that
soldermask are lossy and manufacturing your PCB on different PCB FAB vendor means different soldermask characteristics so for best results and repeatable board design you can remove the soldermask on the RF trace. in that way you can easily inspect your RF trace . you can also view our design guidelines in HIGH SPEED PCB LAYOUT
