How many AD5560 can be connected?

There is no definite answer to this question. The number of AD5560 channels you can gang will largely depend on the path impedance matching of your system, as well as the matching of the sense resistors you are using to ensure balanced current sharing among channels - both of which are something AD5560 has no control over.
