What pins have you got the 2 sensors connected to? To convert the ADC codes to a voltage refer to Page 50 of the Hardware Reference Manual. What sensors are you using? The sensor datasheet should provide insight on how to convert the sensor current to a PPM or volume reading.
We have an updated SDK which provides functions for calculating the current and voltage from sensors. it is located on GitHub here. I would recommend that you migrate to the latest code located here.

In user manual in fig 24 pag 12 of user guide the result of CH1 channel (02 sensor) is 27195 , but after how convert in % vol?
You first need to convert the code to a current. Then use the sensor datasheet to convert the Current to a gas % volume reading. Check out the M355_ECSns_SingleWE example project on GitHub. It provides example functions to convert the ADC code to current reading.
