The 74V/μs is characterized to the large output voltage of 200Vpp and this is without external input clamping diodes.
It may vary if you are using the clamping diodes and it would also vary based on the output voltage that you want.
What are your input signal characteristics?

The input signal is generated from the FPGA. I want to send a 200Vpp (100KHz) signal to the outside.
It is a sine wave. The gain can be adjusted from 1 to several times.
What is the minimum slew rate?

In theory, the 100KHz can be covered by the 74V/us slew rate. For that frequency with a 200V amplitude, we only need about 59V/us slew rate to achieve it.

but there is no minimum value.
Will the minimum value be 59V/μS or more?
(Or what is the probability that a sample below 59V/μS will be shipped?)

In order to have a Min or Max value, it is preferred to have data to have from sample lots (which means many samples are needed). The datasheet only shows the typical values because it was done on a number of evaluation samples. The 59V/us is the ideal slew rate for your 200V and 100kHz frequency.

What is the probability that a sample below 59V/μS will be shipped?
