Zener Diode clamping far too early for overvoltage protection.

I am trying to protect the ADC on my MCU from any overvoltage coming from the MAX9938 current sense amplifier. I am trying to use a zener diode to clamp to ~3.3V, shunting it to ground between the Vout from the MAX9938 and ADC input MCU, thereby providing overvoltage protection. For whatever reason, no matter what diodes I try, the diode is clamping far too early, around 2.5V or so. Any ideas what could cause this?
