The LTC6943 is a set of CMOS analog switches for sample and hold applications. During the hold time the termination must be a capacitor (COG, PPS or PET type) for complete charge transfer. In addition, the hold capacitor must be buffered by a high impedance and very low bias bias current amplifier (FET or CMOS).

I've been told that you'd be just fine grounding the unused pins / switches.
No harm in leaving them floating either.
