In the datasheet is saws to connect the exposed pad to the ground plane, does this also apply where V- is connected to a negative supply voltage? Or should I connect it to V- supply?

Good day. This should apply to any supply configuration, which would mean the pad should be connected to the ground plane for V- = negative supply voltage. Thank you.
